Planning our first “annual” pig roast for August 7th we decided to visit our designated piggy. He is living a life of ease and luxury at Gaia’s Breath Farm (gaiasbreathfarm.com) in Jordanville, New York, an absolutely fantastic swath of productive land run by Chrissy Chiacchia and Mark Santoro, dedicated organic farmers.
Chrissy trained at Johnson and Wales and was mentored by the much-missed chef, Leslie Revsin so she is not only a terrific farmer but a skilled chef. Be sure to check out the farm web site to see the variety of meats and produce that these wonderful people produce.
In the meantime, here are some photos of the pigs. Our guy, now named Buddy, had jumped the fence of the big girls, and settled in with the sows and piglets. Chrissy decided to leave him there as we don’t want him to gain too much weight before he comes to our grill. Having never roasted a whole pig before we thought it best to keep the poundage under one hundred. You will hear more about the pig roast as the plans come together.
