Makes about 1 cup
2 cups fresh cilantro leaves
1 hot red or green chile, stemmed, seeded, and chopped
½ yellow bell pepper, stemmed, seeded, and cut into pieces
¼ cup unsalted, roasted pumpkin seeds
1 teaspoon fresh orange juice
½ teaspoon toasted cumin seeds
Salt to taste
Place the cilantro in the bowl of a food processor fitted with the metal blade. Add the cilantro and give a couple of turns to just chop a bit. Add the chile, bell pepper, pumpkin seeds, orange juices, and cumin seeds, pulsing to a medium mince. Season with salt to taste. If too thin, pulse in additional pumpkin seeds.
Use immediately or store, covered and refrigerated, for up to 1 day.
