Every week I try to make lunch for the guys at Loupe Digital Studios who keep this site looking fresh and sassy. Michael, my number one guy, is a vegetarian so I am having fun coming up with enticing vegetarian dishes that can appeal to the meat-eaters also. Often I put tofu front and center as it is one of Michael’s favorites. Here is a photo of such a lunch:
Bottom layer – couscous cooked with orange juice and vegetable broth and seasoned with grated orange zest, chopped cooked (not hot as Michael hates hot and spicy) green chiles, and a small amount of roasted onion.
Topped with:
Grilled asparagus
Sliced tofu lightly coated with Wondra flour, salt and pepper and grilled on a stove-top grill pan.
On the side: A sauce made with vegetable stock, citrus, green bell peppers, green chiles, onion, garlic, cilantro – rather like a Puerto Rican recaito
The guys sent the dish back clean!
The next time you’re in China Town, visit on of the many groceries there. In the freezer area (best to ask the person mining the shop) and get a package of Aged Tofu. Or ask for it in the phenoetical word to avoid confusion, you would ask them for “Toe Tof” (letter o is prominant). The package is about 10 inches square and I believe about 1/2 inch thick.
This pad of aged Tofu should be cut in to 1×1 squares. Put a good amount of oil in your favorite frying pan and bring up the temperature to 275 degrees or roughly in the range you would fry up some Pomme Frites.
If you don’t like your neighbors or want to get your significant other off the couch, then don’t open the windows. If you love everyone in sight then you must
OPEN-THE-WINDOWS. “Toe Tof” literally means “Stinky Tofu”
Fry until lightly golden brown, about 3 or 4 minutes each side and set on paper towels. This treat is crispy but yet stinky like your favorite Fromage qui pue with a terrific smooth texture in the center. Absolutely must be served hot.
Best served with a quick pickled cabbage or pickle or even a nice Arugula salad and spice goes great with these combos.
